All our lamb is 100% pasture raised. Our animals are ethically raised on organic pastures without the use of genetically engineered grains, antibiotics, hormones or any other growth promoting drugs. Our lambs live on hundreds of acres in upstate New York and are rotationally grazed on certified organic pasture. Rotationally grazing means that the animals are moved from one paddock of pasture to another so that they are constantly getting fresh grass to eat.
All weights are rough estimates +/- 0.05 LBS. When we process our animals it is very hard to get an exact weight on each cut.
These lamb shoulder chops cooked up beautifully, especially when I slow-braised them . The result was tender, melt-in-your-mouth goodness that was full of depth and flavor. Highly recommend for anyone who loves a good ethically-sourced lamb.

Lamb has always been my favorite as a child, but organic lamb is hard to find, let alone humanely slaughtered. I cook these like steaks and they contain all the potassium to keep me going in the persistent onslaught of daily life. I appreciate your dedication, Samer, Diane and company!
Last summer at the Farmer's Market in NYC (92nd St/First Ave) I decided to try the lamb from Halal Pastures. I had to look up how to cook it because I was unfamiliar with lamb. I am now a convert and it is my favorite, edging out the chicken ever so slightly. Very, very good.
